Intimate Christmas Get Together

Lee County Farm City Committee Meeting



I was so excited to not only have the honor of being appointed to this committee, but to prepare breakfast for the members at this week's meeting. The purpose of our group is to highlight the important contribution farmers make to the local economy. Agriculture and farming have far reaching effects that touch all facets of our economy including schools, government, business and industry. The events planned for the coming weeks will give citizens of all ages opportunities to take a sneak peak at initiatives and farming practices of both yesterday and today.

Sunday Morning Breakfast for Two

Sunday is our day to pamper ourselves just a little. We like to get in the kitchen and cook together, sometimes enjoying a libation or two. I thought you might like this super easy menu that is as yummy as it is pretty.

Sunday Morning Breakfast for Two
Don't you wish you were eating with us?

Here is how I put this menu together in no time:

1. Make a pitcher of mimosas to sip while we cook.

2. Wash and dry berries.

3.Take butter and cheese out of refrigerator along with remaining ingredients for "Fluffy Scrambled Eggs".

4. Line plate with several layers of paper towels.

5. Place four slices bacon, cut in half in a skillet over medium heat.

6. While bacon cooks, prepare egg mixture taking care not to allow bacon to burn.

7. Cook eggs according to directions.

8. Drain bacon and arrange on plate.

9. Enjoy


Here is my Mimosa recipe:

Mimosas

2 cups chilled champagne, prosecco or cava
2 cup chilled orange juice

Here is how I put my Mimosa recipe together:
Pour the chilled champagne and orange juice into a pitcher. Serve in tall champagne flutes.

Here is my recipe:

Fluffy Scrambled Eggs 
3 large egg, separated
1/4 cup tablespoons whipping cream
1.4 teaspoon salt
1 tablespoons butter
1/3 cup grated cheese blend
Parsley flakes (optional for garnish)

Here is how I make them:

Beat egg white until fluffy (very soft peaks). Add egg yolks, whipping cream and salt; stir very gently. Place in skillet over medium-low heat. As soon as butter is melted, turn butter to lowest setting. Pour egg mixture into skillet; add grated cheese to cool egg mixture. Cook, stirring constantly, until eggs form clumps and look a little “crumbly”. Remove and serve at once.

Marinated Shrimp with Rum Glaze & Grilled Pineapple Salsa


In honor of Memorial Day and my favorite vet off all time, who just happens to be none other than the love of my life, my husband Col. Herbert R. Horne, Jr., I developed a one-dish meal that can be cooked inside or on a grill outdoors, if your grill has a burner. So, buckle up and hang on tight as I share my latest creation. 
I took bits and pieces from several recipes to make one complex dish, Marinated Shrimp with Rum Glaze served over Bhutanese Red Rice and topped with Grilled Pineapple Salsa (recipes follow). This makes a beautiful, complete meal

Here is how I put this one together:
Before I started, I chopped and measured every ingredient. I first made the marinade for the shrimp so that I could get them into the refrigerator, giving them at least 15 minutes in the marinade. Then, I put my rice on to cook according to instructions on the bag. If you cannot find Bhutanese rice, which is a gorgeous, russet colored rice with a somewhat nutty flavor, wild rice will also work, but takes a lot longer to cook.
While the shrimp is marinating and the rice is cooking, I mixed up the rum glaze, reserving half for later, and grilled the pineapple and bell pepper for my salsa. With everything pre-measured, building the salsa once the pineapple and bell peppers were grilled was a snap. I drained the shrimp putting them on my hot grill pan. I glazed both sides as they grilled, about three minutes per side. By this time, the rice was ready to fluff and plate followed by the shrimp and then the salsa. The reserved glaze made a nice dressing for drizzling over the entire dish. A couple of tablespoons of minced cilantro sprinkled on top just set this meal off. 


Here are my recipes:

Marinated Shrimp with Rum Glaze

24 large shrimp (21 to 25), peeled and deveined
Marinade:
1 tablespoon olive oil
1 tablespoon lemon juice
1/4 teaspoon salt
1 clove garlic clove, minced
Glaze:
1/4 cup brown sugar firmly packed
1/4 cup rum
3 tablespoons Dijon-style mustard
1 tablespoons white wine vinegar
1 tablespoon butter melted
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
Shrimp:
Peel and devein 24 large shrimp; set aside.
Marinade:
Combine oil, lemon juice, salt and garlic in a sealable bag. Add shrimp; toss gently to coat. Seal bag and place in refrigerator for at least 15 minutes (and up to 24 hours).
Glaze:
Place brown sugar, rum, corn syrup, mustard , vinegar, butter, salt and cinnamon in a small mixing bowl. Divide glaze in half reserving 1/2 for drizzling or dipping.
Preparation:
1. Place stove top griddle across two burners. Turn burners to medium high. Drain shrimp, discarding marinade. Place shrimp on griddle.
2. Using a pastry brush, coat shrimp with glaze. Turn after three minutes; coat cooked side of shrimp with rum glaze. Cook an additional 2 to 3 minutes or until shrimp are opaque.
3. Remove and serve with reserved marinade for dipping.
Servings: 6

Grilled Pineapple Salsa

1/2 large fresh pineapple, chopped
1/2 large red bell pepper cut into 1/2-inch cubes
1/2 large yellow bell pepper cut into 1/2-inch cubes
1/3 cup sweet onion, finely chopped
1/2 cup fresh cilantro, finely chopped--2 tablespoons reserved
3 tablespoons honey juice
1 teaspoon ground ginger
1 tablespoon brown sugar
1 large jalapeno, stemmed, seeded and finely diced
1 cube Homemade Adobo Sauce (Click for recipe)
1. Place stove top grill pan over two burners turned to medium-high heat.
2. Place pineapple and bell peppers on hot grill pan coated with non-stick cooking spray. Grill approximately per side.
3. While pineapple and bell peppers grill, place onion, cilantro, honey, brown sugar, ginger, jalapeno and adobo cube in medium mixing bowl. Add grilled pineapple and bell peppers. Toss to thoroughly combine.
4. Serve over meat or seafood of choice.
Servings: 6

Baked Cheesy Corn-on-the-Cob

Here is my recipe:



½ cup butter, softened, but not completely melted
4 ears corn, husks and silk removed
Salt to taste
1 cup fresh Parmesan, shredded



Here is how I did it:


Preheat oven to 375°.

Using a pastry brush, cover corn with thin layer of softened butter. Sprinkle with salt to taste. Place Parmesan in shallow baking dish. Roll buttered corn in grated Parmesan. Roll each ear in foil. Place in oven and bake to 12-15 minutes or until kernels begin to brown. Turn every 3 to 4 minutes.

Yield: 4 servings

Perfect Hamburger Steak with Caramelized Mushrooms


This is just one of several recipes in my "Friday Night Special" dinner.

Here is my recipe:

2 tablespoons butter
1 cup Ener-G bread crumbs
1 tablespoon fresh basil, finely chopped
2 teaspoons fresh oregano, finely chopped
1 teaspoon fresh thyme, finely chopped
2¼ pounds lean ground chuck
1 tablespoons onion flakes
1 teaspoon garlic salt
¼ teaspoons celery seeds
1 tablespoon Worcestershire sauce
2 eggs, slightly beaten

Here is how I did it:

Melt butter in medium-sized skillet over medium-high heat. Place bread crumbs and Italian seasoning in skillet with melted butter. Stir until lightly browned and toasted, about 6 to 8 minutes. Remove from heat; set aside.

Place ground chuck in large mixing bowl. Using a wooden spoon, break into small pieces. Add seasoned bread crumbs, onion flakes, garlic salt, celery seeds, Worcestershire sauce and egg. Mix thoroughly. Using a ½-cup ice cream scoop, place two scoops full of into your hand. Roll mixture into a ball. Place ball on tray lined with wax paper and flatten to about 1-inch thick. Be careful not to over work mixture. Continue until all meat mixture is used.

Burgers may be cooked either in a skillet or on a grill. Either way, cook over medium high heat for 5 to 7 minutes per side, or until surface is brown and juice runs clear. Do not over cook. Mashing burgers during the cooking process with the back of a spatula will also make them tough and dry.

Serves: 6 




Caramelized Mushrooms


Here is my recipe:

6 medium mushrooms, cleaned and thinly sliced
1/2 cup butter
1 tablespoon La Choy soy sauce (gluten free)

Here is how I did it:

Melt butter in medium skillet over medium heat. Place sliced mushrooms in melted butter and turn heat to medium low. Stirring occasionally, cook until mushroom slices are about one-half the original size and are golden brown, about 8 to 10 minutes per side. Add soy sauce during the last five minutes. If the mushrooms begin to brown too quickly, turn heat to low.

Servings: 4

Quick Week Night Meal

A meal that is pretty, delicious and can be on the table in less than an hour is real prize!

Read on for everything you need to put this yummy dinner together.                                

Now for the recipes . . .
  
Honey Glazed Halibut

1/4 cup orange juice
2 tablespoons balsamic vinegar
2 tablespoons honey
2 cloves garlic clove, minced
2 teaspoons olive oil
4 4-ounce halibut fillets
1/4 teaspoon salt
4 sprigs fresh thyme

1. In small saucepan, bring orange juice, balsamic vinegar, honey, garlic & oil to a boil. Reduce heat & simmer until reduced by about one-fourth.

2. Sprinkle halibut with salt; place on grill rack & spoon one-half of glaze over halibut.

3. Bake for 6 minutes; turn very gently & spoon other half of glaze over halibut. Bake for 4 to 6 more minutes or until flaky. Remove from oven & drizzle with any remaining glaze.

4. Garnish with fruit salsa of choice.

Servings: 4               Total Time: 42 minutes
Oven Temperature: 425 degrees Fahrenheir
Nutrition (per serving): 245 calories, 43 calories from fat, 4.9g total fat, 95.4mg cholesterol, 278.5mg sodium, 895.9mg potassium, 12.3g carbohydrates, <1g fiber, 11.1g sugar, 36.2g protein.

Mango Salsa
2 medium mango, peeled, seeded and chopped
4 kiwi, peeled and diced
1/2 cup roasted red peppers, drained & finely chopped
1/2 cup onion, diced
1 Jalapeno pepper seeded and finely chopped
2 tablespoons lemon juice
2 teaspoons Fresh mint leaves, finely chopped
1 teaspoon honey
1/2 teaspoon salt

Place mangoes, kiwi, roasted red bell pepper, onion, jalapeno, lemon juice, mint, honey & salt in a sealable container. Mix welll & refrigerate until time to use.

Servings: 4         Total Time: 30 minutes

Nutrition (per serving): 126 calories, 7 calories from fat, <1g total fat, 0mg cholesterol, 298.2mg sodium, 524.6mg potassium, 31.2g carbohydrates, 5.4g fiber, 13.9g sugar, 2.1g protein.  

Roasted Asparagus
1 pound asparagus spears, trimmed
3 teaspoons olive oil, divided
2 cloves garlic, finely chopped
2 tablespoons Kalamata olives, finely chopped
1 teaspoon sesame seeds
Salt to taste

1. Preheat oven to 425 degrees Fahrenheit.

2. Wash and trim asparagus, and place on baking sheet lined with aluminum foil; set aside.
In small skillet, pour 1 teaspoon olive oil. Sauté garlic until lightly browned. Remove from skillet. In small bowl, combine sautéed garlic and olives. Spread garlic mixture over asparagus.
3. Sprinkle with sesame seeds; add salt to taste.

4. On baking sheet, drizzle oil over trimmed asparagus. Season with salt and pepper, to taste. Toss together to evenly distribute oil and seasoning. Roast in preheated 425° oven for 8 to 10 minutes, depending on the size of the asparagus or until tender, but still crisp.

Servings: 4         Total Time: 15 minutes

And, Here's How I Did This!
Pre-prep: 
  1. Over the weekend, prepare the Mango Salsa. Place salsa in an airtight container, and keep refrigerated until ready to use.
Day of meal prep:
  1. Place aluminum foil over baking sheet.
  2. Line grill pan fitted with rack with aluminum foil.
  3. Chop olives and garlic for asparagus; set aside.
  4. Make glaze for halibut; set aside.
  5. Wash and dry asparagus; cut off ends and discard.
Let's put it all together:

  • Cook rice according to package instructions beginning approximately 15 minutes prior to placing other two dishes in the oven.
  • Preheat oven.
  • Spread asparagus on baking sheet and drizzle with olive oil.Top with chopped olives and garlic.
  • Place halibut on rack of grill pan; brush with glaze.
  • Place asparagus and Halibut in oven.
  • After 6 minutes, gently turn halibut and brush with other half of glaze.
  • After 6 minutes, remove both dishes.
  • Place rice on serving platter; position cooked halibut on top of rice.
  • Top halibut with mango salsa, and garnish with fresh thyme sprigs.
  • Arrange asparagus on platter. Garnish with tomato flower.
  • Pour the wine and enjoy!
