Mixed Berry Crumble


Looking for a quick, easy and pretty dish that may be served at breakfast or for dessert. Then you are in luck! And, this crumble is low in calories (less the frozen gluten free yogurt) and very versatile. Don't have a bag of mixed fruit? No problem! Simply substitute whatever fruit you have on hand. 

Here is my recipe & how I made this recipe:

Fruit Filling:

1 16-ounce package of frozen mixed berried, thawed
1/3 cup granulated sugar, divided
5/8 cup Jackie's Quick Bread Flour Blend (or flour choice), divided
1 tablespoon orange juice
1. Preheat oven to 350 degrees Fahrenheit. Spray 2-quart baking dish with gluten free non-stick cooking spray.
2. Place thawed berries, including juice, granulated sugar, 2 tablespoons flour and orange juice in medium-sized bowl. Toss well. Pour into prepared 2-quart baking dish with deep sides.

Topping:

2 2/3 tablespoons brown sugar, packed
4 tablespoons butter, diced
2 tablespoons gluten free rolled oats, toasted
1. Place remaining flour, remaining sugar, brown sugar and salt in a small bowl; mix thoroughly. Add cold butter; using a pastry blender, cut-in butter to dry ingredients until mixture resembles coarse corn meal.
2. Using your hands, work mixture until large crumbles form. Sprinkle over top of berry mixture. Top with toasted oats.

To cook:

Place baking dish in center of baking sheet. Put into preheated oven. Bake for 40 minutes or until fruit is bubbly and topping is golden brown.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Total Time: 1 hour
