Watermelon Mojitos

Cool, refreshing beverages are a great way to stay cool when is really hot outside. This particular drink makes a great greeting beverage for a Cuban or Mexican theme party.
Watermelon Mojito--Cheers!
Here is my recipe:

1/2 cup water
1/2 cup sugar
30  large mint leaves, finely chopped
4 cups watermelon cubes
12 ounces light rum, optional
6 tablespoons freshly squeezed lime juice
6 mint springs


Here is how I did this:


1. Combine water and sugar in small saucepan over medium high heat. Bring to a boil; allow sugar to dissolve. Remove from heat; allow to cool to room temperature, about 30 minutes.


2. Remove and discard the rind and seeds of the watermelon. Place mint, watermelon, rum, simple syrup and lime juice in bowl of food processor. Process until smooth. Pour mixture into a pitcher for serving.


3. Place crushed ice in 6 glasses. Pour mojito mixture into glasses. Garnish with sprigs of fresh mint. Serve ice cold with a straw.


Servings: 6


Preparation Time: 10 minutes
Inactive Time: 1 hour and 30 minutes
Total Time: 1 hour and 40 minutes


Calories Per Serving: 240.6


Author's Note: If you prefer not to have the pieces of fresh mint leaves in your mouth as you drink (as I do), put the mint into the sauce pan as you make your simple syrup. When mixture reaches boiling, remove from heat and strain. Mint flavored simple syrup works equally as well, just not as pretty.
