Pomango


This is a very adult recipe. Exotic, gorgeous, delicious, summertime at its best and easy to drink—as in way too easy. Down a few of these babies, and you will be on your derrière in short order.
In the middle of the hot summer, this drink is terrific at pool parties or any outside cookout.

11.3 ounces Jumex Mango Nectar (1 can)
12 ounces Orange Juice
1/2 cup sugar
4 ounces peach schnapps
3 ounces light rum
12 ice cubes

1. Place mango nectar, orange juice, sugar, peach schnapps, and rum in blender. Add ice cubes. Blend until well mixed and smooth.

2. Serve in 4 to 6 oz glass

Yield: 12 servings

Tropical Virgin Summer Pina Colada




Just look at this mouth watering drink! Cool, sweet and oh so-o-o-o refreshing!
Want a  little something cool and refreshing to sip on while preparing dinner?  I have  the most fantastic, non-alcoholic Virgin Summer Pina Colada (recipe follows), just for you. This is so tasty, no one can drink just one. If you are expecting a group, you may want to make several batches. This is fun drink for those who are either not old enough to partake or who choose not to.
HOWEVER, if you have had a really hard day and want a little more kick? Substitute 1/2 cup rum for the rum flavoring, and there you will have it. The paper umbrella adds a festive touch. Imagine cooking dinner while sipping on an exotic drink. Seems just a tad decadent, doesn't it?

Mock Bloody Mary



This one warms the insides on cool mornings, but without the buzz of the real stuff. I find it hard to believe that something that tastes so good can be full of antioxidants and other things that are also healthy for you.


Here is my recipe:

46 ounces V8 juice
1/2 teaspoon Tobasco sauce
2 Tablespoons Worcestershire sauce, gluten free
2 Tablespoons lemon juice
1/2 teaspoon salt
1 dash celery salt

Here is how I did this:
1. Place all ingredients into a medium sized pitcher, Stir until all ingredients are thoroughly mixed.

2. To serve, pour over ice. Garnish with a celery stalk and a dash of celery salt.

Servings: 7
Yield: 50 ounces

Total Time: 5 minutes

Watermelon Mojitos

Cool, refreshing beverages are a great way to stay cool when is really hot outside. This particular drink makes a great greeting beverage for a Cuban or Mexican theme party.
Watermelon Mojito--Cheers!
Here is my recipe:

1/2 cup water
1/2 cup sugar
30  large mint leaves, finely chopped
4 cups watermelon cubes
12 ounces light rum, optional
6 tablespoons freshly squeezed lime juice
6 mint springs


Here is how I did this:


1. Combine water and sugar in small saucepan over medium high heat. Bring to a boil; allow sugar to dissolve. Remove from heat; allow to cool to room temperature, about 30 minutes.


2. Remove and discard the rind and seeds of the watermelon. Place mint, watermelon, rum, simple syrup and lime juice in bowl of food processor. Process until smooth. Pour mixture into a pitcher for serving.


3. Place crushed ice in 6 glasses. Pour mojito mixture into glasses. Garnish with sprigs of fresh mint. Serve ice cold with a straw.


Servings: 6


Preparation Time: 10 minutes
Inactive Time: 1 hour and 30 minutes
Total Time: 1 hour and 40 minutes


Calories Per Serving: 240.6


Author's Note: If you prefer not to have the pieces of fresh mint leaves in your mouth as you drink (as I do), put the mint into the sauce pan as you make your simple syrup. When mixture reaches boiling, remove from heat and strain. Mint flavored simple syrup works equally as well, just not as pretty.

Frozen Triple Banana Daiquiri


Here in the South, summer is already here. Nothing cools you off in the late afternoon better than a frozen drink. Here is a beautiful, refreshing Frozen Triple Banana Daiquiri. I used a straw with a tiny umbrella for a little whimsy.

1 1/2 ounces banana rum
1/2 ounce triple sec
1 medium banana
1 1/2 ounces lime juice
2 teaspoons banana flavoring
1 teaspoon sugar
2 1/2 cups ice cubes


1. Place banana rum, triple sec, banana, lime juice, banana favoring and sugar in bowl of blender with ice crusher mode. Blend for 30 seconds or until banana is thoroughly blended.


2. Add ice cubes and blend until completely crushed.


3. To serve, pour into glass of choice. Serve with straw.


Servings: 1
