Naked Spinach and Muenster Quiche



Yummy, comfort food at its finest. The little white chunks of melted cream cheese is what puts this particular quiche into a category of all its own,. 

Here is my recipe:
1 tablespoon vegetable oil
1/2 cup onions, finely chopped
1 12-ounce package frozen spinach, thawed and squeezed dry
5 medium eggs , lightly beaten
2 1/2 cups Muenster cheese, finely grated
1/2 teaspoon salt
1/2 cup cream cheese, cut into 1/4-inch cubes


Here is how I made this dish:

1. Preheat oven to 350 degrees Fahrenheit.

2. Spray a 9-inch quiche dish; set aside.

3. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.

4. In a large bowl, combine eggs, Muenster cheese and salt. Add spinach mixture; use a wooden spoon to thoroughly combine. Fold in cubed creamed cheese. Spoon into prepared quiche dish

5. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

Servings: 8
