Chelsea's Autumn Apple Cider and Champagne Sangria




I cannot take the credit for developing this yummy cocktail, Chelsea's Autumn Apple Cider and Champagne Sangria (recipe follows). My good friend, aka our “adopted” daughter, was kind enough to share it with me. Although a cold cocktail, the flavors are very warming and so fitting for holiday happening during this time of the year. This just may be quickly becoming my favorite cocktail. If a guest prefers a nonalcoholic version, simply use sparkling grape juice instead of champagne.


Here is Chelsea's recipe:
1/2 teaspoon whole cloves
1/2 teaspoon nutmeg
4 whole cinnamon stick, 3 inches long
3 cups apple cider
3 large apples, cored and sliced
1 cup fresh cranberries, plus extra for garnish
1/2 cup dried figs, tough stems removed and cut in half
2 cups red wine
1 1/2 750 ml champagne

Here is how to make this cocktail:
1. Place cloves, nutmeg and cinnamon sticks in the center of a 8" square of cheesecloth. Tie with kitchen twine and place in bottom of large pitcher.

2. Add sliced apples, cranberries and figs. Stir in apple cider and red wine. Cover and allow to chill overnight.

3. To serve, remove solids. Pour about 3-ounces in a champagne flute. Top off with champagne.

Note: Number of servings is based on a 6-ounce champagne flute. Traditional wine glasses may also be used.

Servings: 14   Yield: 5 cups

Total Time: 12 hours and 10 minutes
