Panna Cotta with Candied Orange Slides

I had Panna Cotta for the first time about a week ago. WOW!! Love at first bite. I added Candied Orange Slices (recipe follows). With just the tiniest bit of research I had several recipes to choose among. The one I chose is so easy and simple, we just may have this light, easy and delicious dessert more often than just during the holiday season.
Here is my recipe for Panna Cotta:
1 cup whole milk
1  package unflavored gelatin
3 cups whipping cream
1/3 cup  honey
1 tablespoon sugar
1/8 teaspoon salt

Here is how I made my Panna Cotta:
1. Place milk in small mixing bowl. Sprinkle gelatin over milk. Allow to stand for 3 to 5 minutes or until gelatin has softened.

2. Pour milk mixture into heavy saucepan over medium heat. Cook until gelatin dissolves, but DO NOT ALLOW milk to come to a boil, approximately 4 to 5 minutes.

3. Add cream, honey, sugar and salt. Stir until sugar dissolves, about 5 to 7 minutes. Remove from heat. Pour into wine glasses to 1/2  to 3/4 full.

4. Cool slightly; refrigerate 6 hours or until set BEFORE adding candied orange slices and syrup.

Here is my recipe for Candied  Orange Slices:
Candied Orange Slices

1 large orange
1 1/2 cup sugar
1 1/2 cup water

1. Slice orange into 1/4-inch slices; set aside.

2. Place sugar and water into medium skillet with high sides; bring to a boil. Continue to boil until sugar is completely dissolved and is a thin syrup, about10 to15 minutes.

3. Place orange slices, cooking in batches of four at a time, in simple syrup. Cook over medium-low heat, turning frequently until orange slices are somewhat translucent. Cook over medium-low heat, turning frequently until somewhat translucent, about15 to 20 minutes. Remove orange slices to cooling rack sprayed with gluten free non-stick cooking spray.

4. Continue to cook syrup until very thick. Reserve syrup for another use.
